At Emzi we take our coffee seriously, which is why we’ve teamed up with Extract Coffee Roasters to provide the best coffee experience possible. Our coffee has been specially selected to satisfy every coffee drinkers needs. At the moment we serve Dr Strangelove Espresso, which is perfectly described by Extract Coffee Roasters below:
“Each year we look for a new coffee to use in our Dr Strangelove Espresso. We seek out interesting, crowd-pleasing single origin coffees for coffee lovers to enjoy in cafes or at home, with milk, alternative plant based milks or black.
Our quest for this year’s Dr Strangelove has taken us to Papua New Guinea where we’ve found this jammy espresso with flavours of plum jam, cocoa and vanilla sweetness with milk.
The coffee is grown by smallholders from three different groups; Six K Coffee Limited in Simbu Province, Yomborsa Coffee Henganofi in Eastern Highlands Province and Palden Coffee in Morobe Province. The high altitudes are ideal growing conditions for speciality arabica coffee and limestone-rich soil gives coffee from this region a unique flavour in the cup.
This particular coffee is a washed coffee. It’s grown by 300 small growers who harvest ripe, red cherries, which are sorted, pulped to remove the skins and washed to remove the fruit of the cherry.
Once washed the coffee is dried to under 12% moisture, either by the farmers themselves, or at the dry mill. Next, the beans are transported to the Lahamenegu Mill where the coffee is sorted, graded and the parchment or husks of the beans are removed.
All of this takes place in the high altitudes of the Eastern Highland Province, some 1600 - 1850 metres above sea level where humidity is lower, to preserve the quality of the coffee at every stage of processing.
Papua New Guinea is sometimes overlooked as a producer of speciality coffee - however the country has ideal arabica growing conditions and produces exceptional quality coffees which we think are worth getting excited about.
Arabica coffee production is one of the biggest economic drivers of Papua New Guinea, impacting the livelihoods of about 30% of the population. Coffee is grown mostly by smallholders with as little as 100 trees in “coffee gardens”. Growers live in isolated, rural locations deep in the rainforest, valleys, or mountain slopes. Some of these locations are so remote they are only accessible by foot.
Attracting younger people to stay in these rural areas and continue coffee production, instead of moving away to the cities for work, is a challenge for Papua New Guinea’s coffee industry. Initiatives to help growers improve quality, yield (and earnings) are an important part of encouraging younger people to pursue careers in speciality coffee production. We’re stoked to be supporting one of these initiatives in its first year for our Dr Strangelove Espresso.
Dr Strangelove is always roasted on Bertha, a 30 year old 120kg Probat coffee roaster which we rescued from Bosnia in 2012.
When we found Bertha she was completely decommissioned, a pile of parts destined for scrap. Over four years we rebuilt this machine, retro-fitting an afterburner to eliminate VOCs from it’s emissions and drastically improving fuel efficiency. Today, Bertha runs on just 40% of her original fuel consumption - a beautiful and efficient machine.”
FILTER COFFEE
Filter coffee has been a successful addition to the menu, with speciality guest coffees making appearances on our batch brew. Speak to us about what we’re brewing on the day!
